Zucchini au Gratin

Quick and easy cheesy zuke recipe that the family loves!

Serves: Serves 6
Vegetarian!

Ingredients
2 med zucchini
2 TB margarine
1/4 cup dry bread crumbs
1/2 can condensed cream of mushroom soup
1 TB onion, minced
salt & pepper to taste

Step by Step Instructions
  1. Cut zucchini lengthwise into 1/4 inch thick slices
  2. Melt 1 tablespoon margarine in the skillet. Stir in bread crumbs; toss and set aside
  3. Melt remaining margarine and saute'sliced squash 3-5 minutes.
  4. Add remaining ingredients to skillet and heat until cheese is melted. Serve topped with crumbs.
